  • 1 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1 1/4 teaspoons kosher salt (i'm a salt-aholic; if you're not, you can use less)
  • 1 cup milk chocolate chips (i used the smaller amount and was kind of wishing there was just the tiniest bit more chocolate in my peanut butter)
  • 1 1/2 sticks unsalted butter (melted)
  • 1 1/4 cups light brown sugar
  • 1/4 cup granulated sugar (plus more for rolling your cookies in prior to baking)
  • 1/4 cup vegetable oil (i'm obsessed with using super mild olive oil, ie: NOT extra virgin but you can use vegetable, canola, whatever suits your oil-fancy)
  • 1 tablespoon pure vanilla extract
  • 1 large egg
  • 2 yolks
  • 2 tablespoons Skippy Peanut Butter (or any pb you like that is not of the "natural" variety)
  • maldon sea salt (for sprinkling before baking)
