- 3/4 cup gluten free oat flour
- 1/4 cup chestnut flour
- 1/4 cup tapioca starch
- 1/4 tsp. xanthan gum
- 1 tsp. baking soda
- 2 tsp. ground ginger
- 1 1/2 tsp. ground cinnamon
- 1/2 tsp. ground allspice
- 1/2 tsp. kosher salt
- 1/4 tsp. ground cardamom
- 1/3 cup molasses
- 1/3 cup dark brown sugar
- 1/3 cup cookies
- 1/3 cup granulated sugar
- 1/4 cup unsalted butter (melted and kept warm)
- 1/4 cup bacon fat (melted, frying up 4 slices of thick-cut bacon will yield this much bacon fat)
- 1 large egg
- 1 tsp. pure vanilla extract (I use Rodelle Organics Vanilla Extract)
- 1 tsp. salt (flakey, like maldon)
