- 8 chicken thighs (or drumsticks - all skin removed)
- 3 Tbsp. salt (and Pepper Spice Mix see below for recipe)
- 1/2 red pepper (deseeded and chopped)
- 3 spring onions (finely chopped)
- 1/2 onion (finely chopped)
- 1/2 chilli (deseeded and finely chopped, you can use more or less depending on how spicy you like it)
- cooking spray (Low Calorie)
- 1 Tbsp. sea salt flakes
- 1 Tbsp. sweetener (Granulated, or other sweetener)
- 1 Tbsp. msg (Monosodium Glutamate Optional - see notes below)
- 1/2 Tbsp. Chinese 5 spice
- 1 chilli flakes (good pinch, depending on how hot you like it)
- 1 tsp. ground white pepper
