I think these were the best enchiladas I’ve ever made. they were pretty simple. I used fresh corn tortillas instead of flour. I cooked them in my frying pan first, but left still a little bit raw. I also cooked my chicken in the pressure cooker and shredded instead of using oil on the stovetop for a healthier dish. They were really quite delicious! Everybody loved them.

I used ground beef as we are out of chicken. It turned great. We love it. Definitely will do again. Thank you for the recipe.
