  • 1 1/2 pounds skinless salmon fillets
  • 1/4 teaspoon salt
  • 2 lemons (thinly sliced)
  • 3 tablespoons olive oil (divided)
  • 2 pounds fresh asparagus (trimmed)
  • 1 1/2 cups farro (uncooked)
  • 1/3 cup crumbled feta cheese
  • 2 tablespoons fresh dill (chopped)
  • 3 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 1 shallot (thinly sliced)
  • 1/2 teaspoon salt

    Directions

    1. Preheat grill to medium-high heat. Sprinkle salmon with 1/2 tsp each of salt & pepper.
    2. Layer sliced lemon over salmon fillets; drizzle with 1 TBS oil.

    We have yet to grill the salmon and asparagus, but love the result of smoking the salmon in our stovetop smoker. We have both sautéed the asparagus and cooked it in an asparagus cooker, preferring the latter.
