I played it a little loose with this and made tacos. I didn’t have avocados, and they weren’t missed. I also had to use frozen mango. I sautéed the salmon in a cast iron skillet for a nice crunch and used Monterey Jack for the cheese. It tasted great, and the kids liked it. I will be making it again, probably this winter when we really need a taste of summer!
