- 3 Tbsp. brown sugar
- 4 Tbsp. lime juice
- 4 Tbsp. nuoc nam
- 4 salmon fillets (or divide all quantities by 2 if it is for the first course)
- 3 lemongrass stalks
- 1 shallot
- 1 sprig fresh mint
- 1 Tbsp. coriander (chopped)
- 1 red pepper (to taste)

Directions
- Mix the sugar, lime juice, and nuoc nam in a small bowl.
- Dice the salmon and place in a bowl.
- Cut off both ends of the lemongrass stalks: keep the most fleshy portion (about 5-6 cm. from the base, the rest is too stringy), and remove the first two leaves because they are harder. Cut the stalks into thin slices diagonally (to break the fibers). Add to the fish.
