Salmon Tartar with Cranberries

Tartare is a dish featuring raw meat or fish that is seasoned and typically shaped into a small cake. This recipe for salmon tartare is not quite so fancy in its plating, but just as delicious. Salmon fillets and smoked salmon are diced and mixed together with dill and onion which is then tossed with fresh lemon juice. The salmon mixture is then divided into individually portioned glasses and covered with sugared cranberries for a refreshing seafood dish on a hot day. Serve with your favorite bread.
Ingredients
- 125 grams frozen cranberries
- 2 tsp. sugar
- 600 grams salmon fillets (tail end, deboned and skinless)
- 200 grams smoked salmon
- 1/2 onion (chopped)
- 2 dill (stems, chopped)
- 1 lemon
- 3 Tbsp. heavy cream
- salt
- ground black pepper
Directions
- In a small bowl, gently mix the cranberries with the sugar. Set aside.
- Dice the fresh salmon and smoked salmon, about 1/2 centimeter. Place in a bowl with the onion and dill.
- Squeeze the lemon onto the salmon. Add the cream. Season and stir the ingredients.
- Divide the salmon into 4 serving dishes or glasses, and cover with cranberries.
- Decorate with a dill stem in each glass and serve with black bread and butter.
