- 2 Tbsp. lemon juice (fresh squeezed, ½ lemon)

- 1 Tbsp. lime juice (fresh squeezed, ½ of a lime)
- 1/4 lime (sliced *optional)
- 1/4 cup fresh cilantro (chopped)
- 2 Tbsp. butter
- 1/2 tsp. cracked pepper (and fresh, to taste)
- 1 Hass avocado (ripe, peeled, pitted)
- 1/2 cup greek yogurt (or you can substitute the same amount sour cream)
- 1/4 cup cilantro (chopped)
- 1 Tbsp. fresh lime juice (½ lime)
- 1/4 tsp. cracked pepper (and add from there and fresh, to taste)
- 2 cups tomatoes (ripe, diced)
- 1 1/2 cups red onion (1 medium onion, chopped)
- 1/4 cup cilantro (chopped)
- 1 lemon wedge
- 1 lime wedge
- 1/2 tsp. cracked pepper (and fresh, to taste)
- 24 taco shells (hard, *have extra on hand, just in case)
- 24 soft corn tortillas (small size, *have extra on hand, just in case)

- Mexican cheese blend (shredded)

Great, I used leftover salmon fillets and reheated them at 350 covered with lime slices very tasty
