Very good! Followed recipe and they turned out great! I used paprika and celery salt, instead of old bay. The mustard gave them a nice flavor. Placing this recipe in the recipe box to prepare again and again!

Nonna, I make a similar canned salmon patty. My guess is the baked salmon will be too dry and quite frankly not 'mushy' enough to work. I have a fresh salmon patty recipe if you are interested. Involves a food processor a bit of work though.

Can I use fresh salmon that I bake first? I have to be careful about salt intake. If I can how much should I buy? Will two 6 oz steaks be enough (12 oz)? After baking removing skin & bones I should have about 4 oz each (8 oz).
