  • 10 1/2 ounces rotini pasta
  • 1 tablespoon olive oil
  • 3 1/2 ounces salami (sliced)
  • 2 fronds (baby bulbs fennel, shaved, reserved)
  • 2 cloves garlic (minced)
  • 1/4 teaspoon dried chili flakes
  • 13 ounces fava beans (frozen, blanched, skins removed)
  • 3 1/2 ounces pitted kalamata olives
  • 2 lemons (juiced)

    Directions

    1. Cook pasta in boiling, salted water until al dente. Drain.
    2. Meanwhile, heat olive oil in a large frying pan over high heat. Sauté salami for 2-3 mins, until crisp. Set aside. Reduce heat to medium and sauté fennel, garlic and chili flakes for 1-2 mins, until fennel is tender. Add fava beans and cook for 2 mins. Return salami to pan along with pasta, olives and lemon juice. Toss to combine then season to taste.
    3. Garnish with fennel fronds to serve.
