  • 14 ounces baby potatoes (thickly sliced)
  • 10 ounces tuna
  • 2 tablespoons oil
  • 1 tablespoon capers (drained)
  • 2 medium tomatoes (cut into wedges)
  • 1/2 red onion (small, thinly sliced)
  • 3 cups baby spinach leaves
  • 1 tablespoon red wine vinegar
  • 6 hard boiled eggs (halved)
  • 2 tablespoons chives (chopped)

    Directions

    1. Preheat oven to 450°F. Line a baking tray with baking paper.
    2. Place potatoes on prepared tray and drizzle with 1 tbsp reserved oil. Bake 20 mins, or until tender.
    3. Combine tuna, capers, tomatoes, onion, spinach, vinegar and remaining oil in a large bowl. Add potatoes and toss to combine.
    4. Serve topped with hardboiled eggs and chives.
