This makes for the yummiest and juiciest pork belly...it tastes even better cold the next day in rustic bread sandwich with mayo!! Will definitely be making it again! After turning it skin-side up, I created a base of sliced lemons and limes for the meat to sit on...added flavour and kept the meat moist and juicy and kept the meat off the oily dripping.

Came out great although I used a shorter cooking time with a smaller piece of pork.
