- yellow onion (– medium, diced)
- 3 cloves crushed garlic
- 1 Tbsp. chopped fresh thyme (finely, more to garnish)
- 1 Tbsp. extra virgin olive oil
- sea salt
- cracked pepper (– fresh)
- vegan butter (– earth balance, or coconut oil for cooking)

I loved these. Definitely takes much longer than two minutes each side. Feedback from my family was that they were a bit bland so next time I'll throw in some paprika and punch up the thyme. Salt well!

Delicious recipe. I added ground chia seeds & baked the patties for 10 minutes after frying to help them hold together. Also, let them cool for a few minutes before serving. I definitely recommend subbing coconut oil as it compliments the sweet potatoes nicely.

yes i liked the recipe. The patties did not stick together for me at the frying stage so I added Tahini and a spoon of flour and baked the in the oven. Twenty minutes one side and then turnover for another ten or fifteen until brown. They may not have adhered because I used rice instead of quinoa. next time with Qinoa!

I did replace thyme with cilantro and also added turmeric & and red chilly powder to the patty dough
