Description
The warm caramelised pineapple compliments the sponge, but it’s the ice cream makes this simple dessert truly delicious.
Ingredients

4 SERVINGS
- 4 scoops Carte D'Or Vanilla Ice Cream (100g/200ml)
- 1 fresh pineapple (small, top and tailed and outer skin removed)
- 50 grams light brown sugar
- 1 tsp. mixed spice
- 125 grams madeira cake (ready-made, or pound cake)
- 100 mL whipping cream (whipped, optional)

Directions
- Cut the pineapple into bite size chunks, discarding the hard inner core.
- Place in a frying pan with the sugar and mixed spice and brown to caramelise over a low heat for approximately 15 minutes.
- Place a slice of cake on each plate, top with the caramelised pineapple.
- Scoop a ball of Carte D’Or Vanilla Ice Cream on top of the caramelised pineapple.
- Serve with whipped cream if desired.
