- 2 lb. top sirloin steak (or round steak, cut in bite sized pieces and cooked in crockpot until tender)
- 4 oz. mushrooms (drained)
- 1 cup chopped onion
- 16 oz. frozen peas and carrots
- 2 cloves garlic (minced)
- 1 tsp. sea salt
- 1/2 tsp. ground black pepper
- 3 Tbsp. all purpose flour (or substitute gluten free flour, if desired)
- 1 Tbsp. tomato paste
- 2 cups beef broth (see note below)
- 1 tsp. Worcestershire sauce
- 1/2 tsp. dried oregano
- 3/4 tsp. dried thyme
- 3/4 tsp. dried rosemary
- 1 tsp. dried parsley
- 15 oz. whole kernel corn (drained)
- 2 lb. red potatoes (quartered or chunked, see note below)
- 4 Tbsp. unsalted butter
- 1 cup half and half
- 1 cup Italian cheese blend (6-cheese, shredded, includes mozzarella, romano, asiago, fontina, parmesan and provolone cheeses)
- 1 cup sharp cheddar cheese (shredded)
- 2 tsp. garlic powder
- 1 tsp. ground black pepper
- 2 tsp. sea salt
- parsley (thyme or oregano for garnish, if desired, optional)
