- 1 lb. russet potatoes (peeled and cut into ½-inch cubes, 2 medium potatoes)
- 4 slices bacon (I suggest using a brand that's free of sodium nitrite)
- 1 Tbsp. butter
- 3/4 cup finely chopped onion (1 medium onion)
- 1/2 cup chopped celery (finely, 2 stalks)
- 1 1/2 Tbsp. minced garlic (finely, 4-5 cloves)
- 5 sprigs fresh thyme
- 1/4 cup all-purpose flour
- 2 1/2 cups 2% reduced fat milk
- 1 1/4 cups low salt chicken broth (I recommend Swanson's)
- 1 bay leaf
- 1/4 tsp. kosher salt
- 1/4 tsp. ground black pepper (freshly)
- Less than 1/16 tsp. cayenne pepper (depending on how much spice you like)
- 24 medium shrimp (peeled and deveined, about 1 pound)
- 10 oz. frozen corn kernels (thawed or 1¼ cup fresh corn kernels)
- 1 bunch scallions (thinly sliced)
