SECRET cafe style house italian dressing with Antipasto Salad

This recipe has evaded me for years, after many many hours of looking through websites, recipe books, failed experiments, calling italian grandmothers and restaurants I have finally discovered it…
I first had it at Joe's Pasta & Pizza (I'm sure there are tons of these all throughout the USA) It is an acidic and sweet tomato based dressing and it has a secret ingredient that you would NEVER guess. Remember this is cafe style and not fine dining style, and I'm sure some epicures will scoff, but they can keep their minimalist red wine vinaigrette. I want BIG flavor and here it is. Also in my recipe titles the dressing comes first, why people do it the other way around I have no idea.
Ingredients
- dressing (CAFE STYLE HOUSE ITALIAN)
- 12 oz. Heinz Chili Sauce (bottle of, secret ingredient - not thai chili sauce, this stuff isn't hot at all and has no chilis)
- 1/2 cup apple cider vinegar (based on desired acidity)
- 3 Tbsp. olive oil
- 1 Tbsp. italian seasoning
- 1 minced garlic
- salt
- 8 oz. tomato sauce
- base (CORE SALAD INGREDIENTS)
- 1 head romaine (or Lettuce of Choice)
- 4 oz. ham (chopped)
- 2 oz. salami (chopped)
- 1 oz. prosciutto (torn)
- 4 oz. mushroom (chopped)
- mozzarella (Whole Milk)
- fresh basil
- black olives
- scallions (Chopped)
Directions
- Combine Dressing and Chill
- Prepare and Combine Base Salad Ingredients, Toss, THEN add dressing
- Add Toppers to Taste!
