- 8 oz. orecchiette pasta
- 4 links (500 gr) sausage (links, 500 gr)
- 1 cup red onion (sliced, 1 whole)
- 600 grams cabbage (more/or less chopped)
- 1 Tbsp. EVOO
- 1 Tbsp. butter (or more depending on your sausage)
- salt
- feta cheese

Directions
- Add oil large pan, add sliced sausage and cook until crispy.
- Cook pasta while cooking sausage. Save 1/2 cup pasta water.
- Remove sausage and add butter to pan Add cabbage, onions and garlic, cook until tender. Return sausage to pan, add salt and pepper, cook until cabbage is to you liking.
- Toss pasta with cabbage and sausage.. Add pasta water if too dry.
- Plate meal, sprinkling with feta (or to match your sausage) cheese, and drizzle with truffle oil.
