- 8 Tbsp. unsalted butter (frozen, cut into three slices ** See note, below)
- 3/4 cup all-purpose flour
- 1/3 cup barley flour (or whole wheat pastry flour)
- 2 Tbsp. toasted wheat germ
- 1/2 tsp. salt
- 1 tsp. apple cider vinegar
- 4 Tbsp. ice water
- 1 dash ground cinnamon
- 1/4 cup all-purpose flour
- 1/4 cup dark brown sugar
- 1/4 tsp. salt
- 1/4 tsp. canela (+ a dash for sprinkling on the crust before baking)
- 1/4 tsp. grated nutmeg (freshly)
- 1 dash clove (optional)
- 2 Tbsp. toasted wheat germ
- 1/4 cup unsalted butter
- 4 pears (large, I often use just-ripe Bartletts; Bosc pears also work well, but you may want to peel them.)
- 1/2 cup chopped walnuts (coarsely, or more to taste, pecans and almonds can also be used)
- 1 tsp. granulated sugar
