I've made this soup a few times now and make it nearly exactly as written with two exceptions...I usually reduce the vegetable broth from 8 cups to 6 cups to make it a little bit thicker and I started adding 1 teaspoon of caraway seeds, as I had come across that spice in another similar recipe. I really do suggest adding the caraway seeds...I cant quite explain it but just that one little thing really does put this soup over the top!
