Great recipe! I swapped out lavender instead of rosewater, and did use gel food coloring. This was my first time making Turkish delight but I did a lot of research ahead of time. Mine turned out with a great consistency and flavorful, but a little bit "wet" because the pieces would sweat inside their container and get a cakey cornstarch and sugar coating outside instead of the fine powdery coating. I might cook the gel more thoroughly next time to try and eliminate more moisture from the mixture.
