- 2 tsp. dry yeast (one packet or 1/4 ounce, make sure it's fresh!)
- 2 cups warm water (105-110F)
- 2 tsp. table salt
- 4 cups bread flour (or all-purpose, I usually use all-purpose)
- extra virgin olive oil (about 1/4 cup plus extra for oiling the bowl and baking pan)
- rosemary leaves (fresh, approximately 4 Tbsp)
- 1 meyer lemon (sliced paper thin, seeds removed)
- 1/2 cup oil (pitted, cured, Kalamata, or other flavorful black olives, not the kind in the can.)
- sea salt (or kosher, for sprinkling over the top)

amazing recipe!! best one so far i've tried for focaccia bread and so simple. i just let the yeast sit in the warm water and added some honey for about 10 min before adding the rest of the ingredients because that's what i normally do with bread and also added about a Tbs of olive oil into the dough for flavour and just rosemary and salt with the olive oil on top and it is delicious. let the dough rise under my blanket with a hot water bottle next to it for 40min and it rose a lot! very impressed and baked perfectly. The perfect base recipe that you can do a lot with.
