  • 3 cups unsweetened flaked coconut (6 ounces, available at health food stores or Whole Foods, lightly toasted)
  • 6 Tbsp. sugar
  • 1/4 tsp. fine sea salt
  • 6 Tbsp. unsalted butter (melted)
  • 2 cups heavy cream
  • 1/4 cup powdered sugar
  • 1 tsp. vanilla extract
