- 2 slices bacon (uncooked, chopped, he used canadian bacon, I didn’t have that on hand)
- 1/2 Vidalia onion (chopped)
- 1 tsp. olive oil
- 3 oz. gorgonzola cheese (crumbled, you can sub cheddar if you don’t like blue)
- 3 Tbsp. chives (chopped)
- 2 green onions (chopped)
- 1/4 cup chopped fresh cilantro
- 1/4 cup fresh parsley (chopped)
