- 1 pkg. Israeli couscous (Roasted Garlic, aka Pearl Pasta)
- 1 pkg. mini sweet peppers (usually 3 colors in the package - red, orange and yellow - I use 14 of the peppers for this recipe. Remove the stem, ribs and seeds, then cut the small peppers in half and cut any large peppers in quarters)
- 3 carrots (large, peeled and cut on the diagonal into 1/2" thick slices)
- 2 zucchini (medium size, cut into 1/2" disks, then halved)
- 1 pkg. white button mushrooms (halved)
- 1 red onion (large, cut into chunks)
- 1/2 bunch asparagus (cut on the diagonal into 1" pieces)
- 1 cup grape tomatoes (halved)
- 1/2 pkg. baby spinach (fresh)
- 1 pkg. greens (spring mix, or field greens)
- olive oil
- pepper
- salt
- 1 Tbsp. honey (for roasting the carrots)
- 6 Tbsp. extra virgin olive oil (good quality)
- 6 Tbsp. fresh lemon juice
- 1 lemon (large)
- 6 garlic cloves (small, finely minced)
- 1 Tbsp. fresh parsley (chopped)
- 2 tsp. chives (chopped)
- ground pepper
- kosher salt
