- 2 cups sweet potato (roasted, or winter squash, or another root vegetable)
- 1 container kale ( Dr. Praeger’s, Puffs , about 42 puffs, warmed according to package instructions)
- 6 cups spring mix (or leafy greens of choice)
- 1/2 cup shelled hemp seeds
- 1 pitted dates (large or 2 small)
- 1/2 tsp. fine salt
- 1/8 tsp. freshly ground black pepper
- 1 clove garlic
- 2 Tbsp. apple cider vinegar
- 3/4 cup parsley leaves (packed)
- 1/2 cup cilantro (packed)
- 3/4 cup water
