REALLY good!!! I added an extra pasilla pepper, a jalapeno pepper, subbed baby peppers for the red and orange, subbed cauliflower tortillas, subbed vegan spicy pepper jack and cheddar, and added a pound of chopped shrimp. I also blended a pico de gallo salsa with a habanero and added a few cloves of garlic to the roasting veggies. Then, I made guacamole to go with it.
