- 2 large carrots (sliced into coins or half-moons)
- 2 stalks celery (sliced)
- 2 yukon gold potatoes (medium, cut into small chunks)
- 16 oz. crimini mushrooms (halved or quartered)
- 1/2 onion (chopped)
- 1 head cauliflower (broken into florets)
- 6 cloves garlic (skins left on)
- 12 oz. silken tofu (package, such as Mori-Nu, firm or soft)
- 1/2 cup raw cashews
- 3 cups water
- 2 Tbsp. nutritional yeast (optional)
- 1 tsp. salt (I love Herbamare)

- 2 cups whole wheat flour (I’ve used pastry flour and bread flour, both with good results)
- 1/3 cup refined coconut oil (or non-dairy butter)
- 1 Tbsp. baking powder
- 3/4 tsp. salt
- 2 Tbsp. nutritional yeast (optional but recommended)
- 1 cup unsweetened non-dairy milk (plain)
