- 2 sweet potatoes (medium, or 1 large, washed, peeled, and cut into chunks)
- 1 lb. carrots (I used rainbow because, frankly, they are pretty, washed and sliced)
- 1/4 coconut oil (melted)
- 2 Tbsp. fresh basil (minced)
- 2 Tbsp. fresh parsley (minced)
- 4 cloves garlic (minced)
- sea salt (to taste)
- 1 head butter lettuce (washed & dried and chopped)
- 4 oz. goat cheese
