- 1 zucchini (medium, sliced into half moons or quarters)
- 1 onion (small-medium, cut up into chunk)
- 1 green bell pepper (cored, seeded, sliced into thin strips)
- 1 red bell pepper (cored, seeded, sliced into thin strips)
- 2 carrots (medium, julienned)
- 1 cup winter squash (cubed)
- 1 cup broccoli florets (chopped)
- 1 handful grape tomatoes (or cherry tomatoes, halved)
- 2 1/2 cloves garlic (fresh, minced)
- olive oil (Light)
- sea salt
- fresh ground pepper
- 1 Tbsp. herbs (dried, to taste - Italian or Greek mix, dill, basil, oregano, etc.)
- 1/2 lb. rice noodles (brown, Tinkyada Pasta Joy, spaghetti or linguini works best, cooked according to package directions, drained, rinsed well and set aside)
- 5 1/2 large eggs (or egg white sub, Egg Beaters)
- 1/2 cup sour cream (or cottage cheese)
- sea salt (and pepper, to taste)
- 1 pinch nutmeg (to taste)
- 5 oz. cheddar (or Parmesan, shredded, or crumbles of goat cheese)
- 1 1/4 cups gluten free bread crumbs (Crunchy)
- 1/2 cup chopped walnuts (buttered, pecans, slivered almonds)
- 3/4 cup feta cheese crumbles (or goat cheese)
- 1/4 cup freshly chopped parsley
- muenster cheese (Sprinkle of grated, or Jack cheese)
