    Nice and moist. Took longer to cook because(1.) It was not completely thawed after 2 1/2 days in refrigerator. (2.) It weighed 7 pounds. (3.) It included the bone.. So double the time. I put about a tablespoon of both sage and thyme under the skin and a lemon in the holes., but it would have been fine without them.
