- 1 red onion (large, thickly sliced)
- 1/2 tsp. sea salt (or to taste)
- 2 Tbsp. olive oil
- 2 Tbsp. lemon juice
- 1 Tbsp. tomato paste (slow-roasted, regular tomato paste works too!)
- 4 garlic cloves (minced)
- 1 tsp. red pepper flakes
- 2 cups beans (cooked, I used a mix of black beans and black-eyed peas)
- 1/2 cup roasted tomatoes (slow, or sun-dried tomatoes)
- 1/4 cup fresh basil (chopped, plus more for garnish)
- freshly ground black pepper (to taste)
