I made quite a few modifications to the original recipe. I roasted the tomatoes 3x as long. I think 180 is way to low for roasting. I also added lots of smoked paprika for a smokey flavor and fresh basil then topped with a drizzle of good olive oil and a sprinkle of sea salt. Finally, I served with grilled pimento toast points. The dipping was the best part! The recipe made enough for one serving. Turned out pretty good with modifications to taste.
