- 3 sweet potatoes (medium, diced 1″ pieces)
- 2 apples (medium, cored and diced, tart variety works best)
- 1 lb. onions (small, quartered)
- 1 apple (cored and diced)
- 1 head garlic (top cut off)

- 3 chicken sausages (sliced vertically 1/2 inch thick)

OMG when I looked at the ingredients I was a little skeptical. I tried it anyway because my husband asked me to cook a pot of soup. So I looked up soups from Yummly App. I prepared this roasted sweet potato, apple and chicken sausage soup with two differences. Instead of chicken sausage I boiled chicken to get my chicken stock. I placed in the pot onions, carrots, celery, rosemary, thyme, garlic, salt and pepper to make the stock. I removed the veggies except the carrots and chicken. I sliced the chicken and seared the chicken and sausage then added the carrots to the chicken stock. I placed two separate pans 1/4 and 3/4 sweet potatoes, onions, and apples in the oven on 475 degrees. I added the 3/4 of mixture to my food processor and added all ingredients. The soup is amazing.
