- 3 cups sweet potatoes (chopped, cut into 1/2-inch thick pieces)
- 1 Tbsp. olive oil
- 1 pkg. long grain and wild rice mix (or see homemade version below)
- 2 apple (large, I used honey-crisp, chopped or thinly sliced)
- 1 avocado (ripe, chopped or thinly sliced)
- 2 tsp. lemon juice
- 1/2 cup dried cranberries
- 1/2 cup sliced almonds (roasted)
- 9 cups lettuce (mixed greens, I use a 50/50 blend spinach & spring mix leaves)
- crumbled goat cheese (Optional:, or feta)
- 1/2 Tbsp. lemon juice (freshly squeezed)
- 1/2 tsp. lemon zest
- 1/4 tsp. onion powder
- 3 Tbsp. balsamic vinegar
- 1 Tbsp. Dijon mustard
- 1 tsp. minced garlic
- 1/2 cup olive oil

- 2/3 cup wild rice
- 1 Tbsp. butter
- 2/3 cup chicken broth
- 1/2 tsp. sea salt
- 1/2 tsp. dried parsley
- 1/4 tsp. cracked pepper (freshly)
- 1/4 tsp. oregano
- 1 tsp. white sugar
- 1/4 tsp. thyme
- 1/4 tsp. garlic powder
- 1/4 tsp. onion powder
