- 2 plantains (peeled and cut into ¼" slices)
- 2 sweet potatoes (small, peeled and chop them into pieces that are about ½ the size of the plantain slices)
- 1 Tbsp. olive oil
- 1 tsp. chili powder
- 1/2 tsp. salt
- 1/4 tsp. cumin
- 1/4 tsp. garlic powder
- 1/4 tsp. cayenne (optional, will make it spicy!)
- 6 corn tortillas (large, or wheat)
- cooked rice
- black beans
- cilantro
- jalapeño
- pepper (sliced)
- corn kernels
- lime
- cilantro (sauce, recipe below, or whatever else you want to layer into your burrito!)
- 1/2 cup raw cashews (see notes)
- 1/2 cup water
- 1/4 cup lime juice (about 2 limes)
- 1 handful cilantro (small, about ¼ cup lightly packed)
- 1 Tbsp. Dijon mustard
- 1 clove garlic
- 1 pinch black pepper
