- 5 sweet potatoes (or Yams, peeled and cubed into bite sized pieces)
- 1 lb. butternut squash (peeled and cubed into bite sized pieces)
- 4 Tbsp. olive oil (enough to coat the yams and squash for roasting)
- 1/2 cup fresh flat leaf parsley
- 1/2 cup green onion (Chopped)
- 1/4 cup dried cranberries
- 1/4 almond slivers (or Slices, use raw or lightly toast for added flavor)
- cracked pepper
- kosher salt
- 1/4 cup olive oil
- 3 Tbsp. balsamic vinegar
- 2 Tbsp. honey (Raw is Best)
- 1 pinch salt
