Roasted Stuffed Patty Pan Squash



  • 2 1/2 tablespoons chili powder
  • 1 1/2 tablespoons sea salt
  • 1 1/2 tablespoons ground cumin
  • 1 tablespoon dried oregano (ground)
  • 2 teaspoons onion powder
  • 2 teaspoons smoked paprika (I use both smoked and non smoked)
  • 2 teaspoons cayenne pepper (you can add or subtract 1 tsp based on your heat preference)
  • 1/4 teaspoon cracked black pepper
  • 8 patty pan squash (they also go by the name of "flying saucer squash" for obvious reasons)
  • sea salt
  • 2 pounds ground beef (you can also use ground turkey or chicken if you prefer)
  • 1/2 cup diced yellow onion
  • 2 cloves garlic (minced)
  • 1/2 cup water
  • 1 can tomato puree (/sauce, I used the 15 oz no salt MuirGlen brand)
  • 4 tablespoons taco seasoning (recipe above)
