- canola cooking spray
- sea salt (/Pepper, to taste)
- 3 Tbsp. butter
- 2 Tbsp. flour
- 1 cup heavy cream (microwave for 10-15 seconds to take off chill)
- 1 cup milk (microwave for 10-15 seconds to take off chill)
- 1/2 lb. pepper jack cheese (cut in small cubes)
- 1 1/2 cups asiago (divided grated, or parmesan)
- 6 oz. goat cheese (cut into small pieces)
- 1 cup sliced green onions (chiffonade, and tops, reserve ¼ cup for garnish, optional)
