- 3 shallots (banana, 2 cut into quarters, 1 very finely chopped)
- 1 sprig rosemary (finely chopped)
- 5 Tbsp. olive oil (or cold-pressed rapeseed)
- 1 Tbsp. wholegrain mustard
- 2 Tbsp. apple cider vinegar
- salt
- pepper
- 3 stems purple sprouting broccoli (or other long-stemmed broccoli)
- 125 grams halloumi (roughly half a block, though I won't judge you if you use the whole block)
- 3 handfuls salad leaves
