- 5 oz. arugula
- 2 leeks (white and light-green parts only, halved lengthwise, rinsed well and thinly sliced)
- 8 oz. shiitake mushrooms (stem edge trimmed off and the rest sliced 1/8 inch thick, we use the stem and slice it into pieces)
- 1 lemon (medium)
- 5 Tbsp. extra-virgin olive oil (divided)
- kosher salt
- freshly ground black pepper
- balsamic glaze (– we have one from Gia Russa)
