- 6 lb. root vegetables (any combination of, such as orange, yellow and purple carrots, white, yellow, or purple top turnip, celery root, sweet potato, new red potatoes, golden beets, and parsnips)
- 1 lb. yellow onion (peeled and cut into wedges, about 2 medium onions)
- 1/2 cup extra virgin olive oil
- 1/2 cup Italian flat leaf parsley (fresh)
- 2 Tbsp. fresh thyme
- 2 Tbsp. fresh rosemary
- 2 tsp. sea salt (or kosher)
- 1 tsp. freshly ground black pepper
- 6 cloves fresh garlic (left whole)
- 1/4 cup dried cranberries

These veggies turned out wonderfully. The seasoning is top notch, with fresh herbs, so... the oven does the rest. The dinner was a big success. I served these Veggies with Meatloaf & Gravy, Smashed Cauliflower, and a Winter Salad. The Cauliflower, Veggies, and Salad added to our Mearloaf made it a lighter "comfort food dinner". Dec. here in So Florida now, so the Meal is sometimes the only reminder of the season, and comfort food is my nostalgic delight.
