I love it! But I think next time I will do more roasted red peppers. I added just a pinch more of the seasonings based on reviews saying it was bland. And my garlic is potent with big cloves. So if following recipe as is, I think I’d say to just add a bit more spice bc mine was great!

Like others said, this recipe bland as is, but it's a really good base for alterations/variations. I used fresh basil and more thyme and it came out fantastic.

This is a great place to start and then add your own spices for more flavour since it's a little bland.

This soup was amazing! Used double the red pepper and added some crushed red peppers for heat and turned out awesome!

So easy and delicious. I added cayenne pepper and a bit of extra garlic powder for my own taste preferences.

Roasted own red peppers. Used soy milk, improved creaminess. taste was a little bland despite using homegrown fresh tomatoes, so added feta cheese (about 1/4 cup) and needs a bit of "kick" so maybe add spice to preference!

I roasted my own red peppers and replaced butter with margarine. The soup still turned out quite well too.
