- 1 red pepper (large, washed and diced, or 2 small ones)
- 2 cups parsnips (peeled and diced)
- 1/3 green onion (chopped, or sub 1 small white onion if not on low FODMAPS)
- 1 Tbsp. spice blend (Herbs de Provence, I use this brand)
- 1/2 tsp. sea salt (to taste)
- 1 cup avocado oil (buy here)
