  • 2 shallots (large, finely chopped)
  • 1 handful fresh basil
  • 1/2 onion (chopped)
  • 1 red pepper
  • 1/2 red chili (chopped)
  • 1 garlic clove (chopped)
  • 1 handful fresh spinach (add shortly before pasta is done)
  • 2 tablespoons nutritional yeast
  • cherry tomatoes (a couple)
  • 1/2 can chopped tomatoes
  • fresh basil (save some for topping ;)
  • 15 cups water (+1/2 tsp veggie stock)
  • 1/2 cup milk (plant, almond, oat, etc.)
  • 1 teaspoon paprika
  • pasta (choice, I used brown rice)
  • toasted pine nuts (optional:, for topping, recommended because OH SO GOOD)
