To Serve: Just before removing from oven, place pork over vegetables, drizzle with glaze and warm through.

- 1 lb. rotisserie pork
- 12 Brussels sprouts (halved)
- 3 carrots (peeled, cut on bias)
- 2 onions (medium-sized, sliced)
- 1 lb. fingerling potatoes (halved)
- 1/2 cup extra-virgin olive oil
- salt
- cracked pepper
- 2 Tbsp. balsamic syrup
- 2 Tbsp. honey
- 2 Tbsp. extra virgin olive oil

Directions
- For the Pork: Thinly slice rotisserie pork
- In a mixing bowl, combine Brussels sprouts, carrots, onions and fingerling potatoes with ½ cup olive oil, salt and pepper. Toss to combine and coat all ingredients.
- Place on sheet tray and roast at 400°F until potatoes are tender and other vegetables are evenly browned, about 40 minutes.
- For Balsamic Glaze: Mix balsamic syrup, honey and olive oil.
