To Serve: Just before removing from oven, place pork over vegetables, drizzle with glaze and warm through.

Ingredients

  • 1 pound rotisserie pork
  • 12 Brussels sprouts (halved)
  • 3 carrots (peeled, cut on bias)
  • 2 onions (medium-sized, sliced)
  • 1 pound fingerling potatoes (halved)
  • 1/2 cup extra-virgin olive oil
  • salt
  • cracked pepper
  • 2 tablespoons balsamic syrup
  • 2 tablespoons honey
  • 2 tablespoons extra virgin olive oil

    Directions

    1. For the Pork: Thinly slice rotisserie pork
    2. In a mixing bowl, combine Brussels sprouts, carrots, onions and fingerling potatoes with ½ cup olive oil, salt and pepper. Toss to combine and coat all ingredients.
    3. Place on sheet tray and roast at 400°F until potatoes are tender and other vegetables are evenly browned, about 40 minutes.
    4. For Balsamic Glaze: Mix balsamic syrup, honey and olive oil.
