- 1 Tbsp. fresh rosemary (removed from the stem & minced)
- 3 Tbsp. rendered bacon fat
- 3 lb. pork tenderloin (trimmed of fat and silver skin. Typically this is going to be 2 tenderloins that come together in a package.)
- 1 Tbsp. kosher salt (divided)
- 1/2 Tbsp. pepper (divided)
- 2 Tbsp. olive oil
- 2 onions (diced, I use Spanish)
- 1 shallot (diced)
- 4 carrots (peeled & diced, approx 1 cup)
- 3 celery stalks (diced, approx 1 cup)
- 1 tsp. dried oregano
- 1 tsp. dried basil
- 1 tsp. red pepper flakes
- 1 cup dry red wine
- 14.5 oz. diced tomatoes
