Interesting, there's thyme in the photo used, but there's no thyme in the recipe. Wife prefers finely minced sage and rosemary but I mix it up with other flavor profiles about 1/2 the time. BTW, IF you use a cast iron pan to brown the exterior, you can leave the pork in that pan and just put the whole thing in the oven, just flip the PTL every 10 minutes. Mangia, Mangia.

Very tasty... my only complaint about the recipe is you need to cook it longer than 15 minutes after searing. Mine was raw in the middle after searing in a hot cast iron skillet then going into a 450 oven

It came out perfect! Nice and moist. IUsed a cast iron skillet and took it out at 160 degrees I let it rest and sliced against the grain! It was so juicy! I will only make these like this in the future! Bravo! And thank you!
