- 6 green chiles (large poblano, to yield 1 1/2 cups roasted, peeled, and chopped,, can sub canned chopped green chiles, enough to yield 1 to 1 1/2 cups, the amount depends on how hot the chiles are)
- 3 Tbsp. butter
- 2 onions (medium, diced, about 2 1/2 cups)
- 2 celery (ribs, diced, about 3/4 cup)
- 1 clove garlic (minced, 1 teaspoon)
- 2 yukon gold potatoes (medium, peeled, cut into 1-inch chunks, 10 - 12 ounces)
- 4 ears of corn (enough to yield 4 cups of corn kernels, or 4 cups of corn)
- 5 cups chicken stock (use vegetable stock for vegetarian option)
- 1 tsp. kosher salt
- 2 bay leaves
- 1 tsp. ground cumin
- 1/2 tsp. oregano
- 1 cup heavy cream
- 1/2 tsp. black pepper
- 2 limes (one sliced for garnish, one for juice, optional)

GOOD! Came together easily too! I replaced the cream with 2% milk and added a flour slurry to thicken it slightly then tempered the heat with some sour cream! We loved this soup! I will definitely make it again!

I made this the day after Thanksgiving to give us a break from heavy starches, breads and dough of yesterday.
We had lots of fresh poblanos in the garden so that made for easy inspiration. And I found fresh corn on the cob at the grocery store! (We live in Texas.)
We also don’t eat a lot of potatoes or celery, both of which we had leftover from yesterday, so again, good inspiration for a chowder.
And yesterday’s turkey carcass made a nice stock.
I split the amount of cream and used 2% milk for part of it to lighten it up just a bit.
I also used the immersion blender for a few rounds to thicken this up but I also think it helped blend the flavors more quickly. I highly recommend taking the few seconds to do that one step.
